Tom Collins Cocktail Recipe
Gin, fresh lemon, a little sugar and a long pour of soda over ice. The Tom Collins has been the tall drink of choice since the 1870s, and it is still the easiest way to make a bottle of gin last a whole afternoon. Built straight in the glass, no shaker needed.

Ingredients
- Gin - 90ml (3 Squeezes), Old Tom gin for a true Tom Collins
- Fresh lemon juice - 60ml (2 Squeezes)
- Sugar syrup - 30ml (1 Squeeze)
- Soda water - about 120ml, to top
Method
- Build over ice in a highball glass: pour in the gin, lemon juice and sugar syrup.
- Top with soda water and stir gently.
- Garnish with a lemon slice and a maraschino cherry.
Squeeze Tip
Fill the glass with ice, right to the top. It sounds backwards, but a full glass of ice melts slower than half a glass, so the drink stays cold and strong instead of turning into warm lemonade in five minutes. Keep the soda in the fridge, pour it last, and give it one gentle stir. Every extra stir knocks the fizz out.
