Sazerac cocktail

The official cocktail of New Orleans, and it still only asks for four things. Rye, sugar, Peychaud's, and a glass rinsed with absinthe that you tip straight back out. There is no ice in the finished drink, which is exactly why the stir matters.

Ingredients

  • Rye Whiskey - 90ml (3 Squeezes)
  • Sugar Syrup - 30ml (1 Squeeze)
  • Absinthe - to rinse the glass
  • Peychaud's Bitters - a dash
  • Lemon Peel - to garnish

Method

  1. Put the rye, sugar syrup and bitters into a mixing glass with ice and stir.
  2. Rinse the serving glass with a little absinthe and tip it out, then strain the drink in.
  3. Express a lemon peel over the top to garnish.

Squeeze Tip

The absinthe is a rinse, not an ingredient. Swirl a small splash around the inside of a chilled glass until it coats, then tip the rest out. Leave it sitting in there and the aniseed flattens everything else. Stir the drink too, never shake it. There is no juice or cream in a Sazerac, so shaking only makes it cloudy and waters it down.
