Bramble cocktail

Gin, fresh lemon and a glass packed with crushed ice, then a drizzle of blackberry liqueur that bleeds purple down through the ice. London bartender Dick Bradsell created the Bramble in 1984, and bars have poured it ever since. You need a shaker, some crushed ice and about two minutes.

Serves 2

Ingredients

  • Gin - 90ml (3 Squeezes)
  • Fresh lemon juice - 60ml (2 Squeezes)
  • Sugar syrup - a dash
  • Crème de mûre (blackberry liqueur) - 30ml (1 Squeeze), to drizzle

Method

  1. Shake the gin, lemon juice and a dash of sugar syrup with ice.
  2. Strain into glasses filled with crushed ice, then mound more crushed ice on top.
  3. Drizzle the crème de mûre over the top for the "bleeding" effect.
  4. Garnish with a blackberry and a lemon slice.

Squeeze Tip

Use crushed ice. It slows the crème de mûre down, so it runs through the glass in purple ribbons instead of sinking to the bottom. Add the liqueur last, pour it over the top and leave it alone, because one stir and the bleed is gone. No crushed ice? Wrap a handful of cubes in a clean tea towel and give them a few whacks with a rolling pin.
