The Special Kaye cocktail

Mumma Squeeze, our Kaye, lives for summer. She built this one to taste like a warm afternoon in a glass, any month of the year. Gin and Aperol over fresh lime, shaken cold and poured long. We named it after her, the Special Kaye.

Ingredients

  • Gin - 60ml (2 Squeezes)
  • Aperol - 60ml (2 Squeezes)
  • Lime juice - 30ml (1 Squeeze)
  • Sugar syrup - 15ml (half a Squeeze)
  • Soda water - to top (optional)

Method

  1. Add the gin, Aperol, lime juice and sugar syrup to a shaker full of ice.
  2. Shake hard until it is ice cold.
  3. Strain into a glass over fresh ice.
  4. Top with soda water if you like it longer and fizzier. Makes two.

Squeeze Tip

Squeeze fresh lime every time. Bottled juice tastes flat and dulls the whole glass. Go easy on the soda too: add it last and pour gentle, so the Aperol kick stays out front.
