Rocket Fuel Cocktail Recipe
Rocket Fuel is a pina colada that packed a bag and moved to the tropics. Blend dark rum, amaretto and Malibu with coconut and fresh pineapple, then pour it frosty. One sip and you have left winter behind.
Ingredients
- Dark Rum - 60ml (2 Squeezes)
- Amaretto - 60ml (2 Squeezes)
- Malibu - 60ml (2 Squeezes)
- Coconut Milk or Cream - 90ml (3 Squeezes)
- Pineapple Pieces - 1 small tin (approx. 225g)
Method
- Add the dark rum, amaretto, Malibu, coconut and pineapple to a blender with a scoop of ice.
- Pulse until thick and smooth.
- Pour into two glasses, garnish with a pineapple wedge and a cherry, and serve. Serves 2.
Squeeze Tip
Freeze your pineapple before it hits the blender. Tinned fruit at fridge temperature waters everything down as the ice melts. Frozen pineapple keeps the drink thick, cold and properly slushie.
